• Lily Chip Chia Muffins

    Makes 20

    Heat oven to 350 degrees F

    In large mixing bowl, smash two ripe bananas

    Stir in 6 Tablespoons chia seeds

    4 eggs

    4 Tablespoons Greek Yogurt

    8 teaspoons real vanilla extract

    In blender or food processor, pulverize 3 ½ cups oatmeal to make a

    flour type texture

    Stir in ¾ cup stevia

    4 teaspoons baking powder

    Add to wet ingredients and stir

    Mix in ½ cup sugar free Lily chocolate chips (or more!)

    Drop into muffin paper lined muffin pans.

    Bake 15 minutes.
